What you’ll need: (makes 4 biscuits, double the measurements if you want more)

  • 1-1/2 tbs coconut flour, plus 1 tbs for dustingGrain Free Honey Biscuits
  • 1-3/4 cups almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup softened coconut oil
  • 2 eggs
  • 2 tbs honey
  • 2 tbs almond milk

What to do:

  1. Combine all the flours, salt, and baking soda in a large mixing bowl.
  2. In a separate bowl, cream together using a wooden spoon or electric mixer the coconut oil, eggs, honey, and almond milk.
  3. Add the flour mixture to the wet ingredients and stir until just combined
  4. Sprinkle 1 teaspoon of coconut flour on baking paper. Divide the dough into 4 parts, then rub a little flour on your hands. Roll each part into a ball, then place on the baking paper
  5. Sprinkle another teaspoon of flour on top of all the balls, then place another piece of baking paper on top. Use your hand to flatten each ball of dough to about 1.5 inches thickness.
  6. Bake for 15 minutes at 180 degrees. Serve warm with honey, butter, jam, or just on their own!
  7. Can be stored in an airtight container for up to a week, if they last that long 🙂
