What you’ll need:

  • 1/2 sweet potato, roughly chopped into small piecesSalmon Patties
  • 1/2 cup almond meal
  • 1/4 cup parsley, chopped finely
  • 3 tbs spring onion, finely sliced
  • 1 tbs fresh lemon juice
  • 1/4 tsp lemon rind
  • 1 organic free-range egg
  • 100g tinned salmon
  • 1 tbs of coconut oil or extra virgin olive oil

What to do:

  1. Steam sweet potato until soft
  2. Transfer the sweet potato into a large bowl and mash until smooth
  3. Add the almond meal, parsley, spring onion, lemon juice, egg and salmon to the bowl and mixed thoroughly
  4. Heat a non-stick fry-pan on low-medium heat and the coconut oil or extra virgin olive oil
  5. Form 6 patties from the mixture and gently place into the fry-pan, cooking for 5-10 minutes on each side until lightly browned.
  6. Serve warm or place in airtight container to have as a snack
  7. Enjoy!
