What you’ll need:
- 1/2 sweet potato, roughly chopped into small pieces
- 1/2 cup almond meal
- 1/4 cup parsley, chopped finely
- 3 tbs spring onion, finely sliced
- 1 tbs fresh lemon juice
- 1/4 tsp lemon rind
- 1 organic free-range egg
- 100g tinned salmon
- 1 tbs of coconut oil or extra virgin olive oil
What to do:
- Steam sweet potato until soft
- Transfer the sweet potato into a large bowl and mash until smooth
- Add the almond meal, parsley, spring onion, lemon juice, egg and salmon to the bowl and mixed thoroughly
- Heat a non-stick fry-pan on low-medium heat and the coconut oil or extra virgin olive oil
- Form 6 patties from the mixture and gently place into the fry-pan, cooking for 5-10 minutes on each side until lightly browned.
- Serve warm or place in airtight container to have as a snack
