A healthy snack on the go!
 
What you’ll need:
  • 1 medium sized sweet potato, diced into small cubesRoast Vegie Frittata Muffins
  • 1 butternut pumpkin, diced into small cubes
  • 3 medium sized carrots, peeled and diced into small cubes
  • 12 eggs
  • 1 bunch of parsley finely chopped
  • 2 big handfuls of spinach, roughly chopped
  • salt and pepper
  • Extra virgin olive oil
What to do:
  1. Preheat oven to 170 degrees
  2. Combine potato, pumpkin and carrots into large bowel
  3. Drizzle with a generous amount of olive oil until all veggies are well coated
  4. Add salt and pepper to mixture. Be generous with it
  5. Line a baking tray with baking paper
  6. Spread mixture evenly onto tray, if there is too much mixture to fit on the one tray you may need to divide it between two
  7. Roast for approx 20-30minutes
  8. Meanwhile whisk the eggs
  9. Add the parsley and spinach to the egg mixture
  10. Add muffin cases to the 12 case muffin tin
  11. Once the veggies are roasted combine with egg mixture. Mix well
  12. Pour mixture into muffin cases
  13. Bake in oven for a further 15-25mins
  14. Remove from muffin cases and enjoy!
